Venison Provenance Manager
Kgomotso Sithole, our venison provenance manager, names every venison lot and tracks it from veld to butcher block.

Ms Kgomotso Sithole’s days start early, with the records for each group of deer ready for checking before the morning sun has warmed the Karoo stones. She marks every lot by name and origin, following their progress from camp to abattoir, and then on to butchers or chefs. She checks abattoir documentation, transport details and cold chain logs daily, ensuring there are no gaps. Kgomotso also inspects the chillers during packing, making sure backup systems are ready in case of a power cut. She updates the lot sheets with weights, dates and destination, keeping the story of each batch clear for everyone down the line.
Kgomotso is the main point of contact for kitchen teams, butchers and the registered abattoir staff. She makes sure every chef or butcher receiving one of our lots gets a full provenance pack: named origin, dates, and the registered abattoir slip. If a vet is needed for a health check or a chef has questions about a specific lot, she arranges the details and follows up until the question is settled. Kgomotso also helps visitors on education days understand how traceability works, from veld conditions to the table, and why proper documentation is vital for both food safety and legal compliance.
There are certain standards Kgomotso will not bend on, no matter the pressure or the season. She insists on a full cold chain log from harvest to handover, and will not send out a lot unless every entry matches up. She always confirms each animal in a lot comes from the right camp and has gone through the proper abattoir process. If ever there is a question about provenance, she stops and double-checks the records before anything moves on.
For Kgomotso, good venison depends on trust and on taste, and she answers queries sent through our contact form.
