Karoo venison farmers
Pasture-raised deer, veld to table
Deer Farming is a South African family venison business rooted at Karoo Edge Farm, with fallow, red, chital (axis deer) and sika deer. We focus on calm animal management, veld conservation and quality venison for local kitchens and game farms.
Karoo Edge Farm
Our herds and the hands that guide them
Our largest herd is the main fallow deer herd on Karoo Edge, with red and sika deer in neighbouring veld camps and chital in our KZN Midlands woodland camps, all under close permit control. Every herd is managed with quiet movement, strong fencing, veld rotation and careful record-keeping.
We believe in low-stress handling, solid camp infrastructure and water points built to withstand both drought and berg winds. Fence lines are checked daily and walked on foot every week. Shade, rest and healthy pastures come first.

Venison and live deer
Supplying venison and live deer for the right home
We supply traceable venison, always from animals humanely slaughtered at our registered partner abattoir, to lodge kitchens, restaurants, butchers and farm shops. Chilled delivery is arranged to keep the chain cold and the meat fresh. Provenance and batch details are recorded for every named lot.
For permitted farmers, we offer stud sales and advice on stocking, fencing and veld-carrying capacity. All live deer moves are handled under the latest permit and, if needed, veterinary inspection, especially where national foot-and-mouth disease controls apply. Conservation breeding and genetic records are always part of the deal.

Practices
How the camps work
01Lodge supply
We supply Lowveld and Karoo lodges with traceable venison from calm, well-managed fallow and red deer herds.
02Pasture rotation
Pasture rotation on our farms helps every deer herd recover and thrive through managed rest and veld planning.
03Fence & camp design
Game-grade fences, double-latched gates and camps sized to the veld keep our deer calm, our grazing rested and our permits valid.
04Veterinary protocols
Veterinary protocols centre on practical herd health calendars, planned with experienced South African game veterinarians.
05Record keeping
Careful records keep our herds healthy, our venison traceable and our breeding lines clear.
06Game farm stocking
We plan deer numbers for each game farm around its veld and water, and keep every stocking move within the permit rules.
Permits
Permitted land only
Fallow, red, sika and axis deer are listed alien species, so every camp we run sits under a DFFE permit.
Water
Planning for a dry season
SAWS expects a strong El Niño into summer, so water points and camp rest come first.
Venison
Registered partner abattoir
Every lot is slaughtered at our registered partner abattoir and named back to its camp.
Pastures
How we shape our grazing camps

Karoo grassveld mix
Fallow deer stay calm and healthy in well-planned Karoo grassveld camps designed for shade, forage and shelter.

Highland wind pasture
Highland wind pasture gives red deer herds altitude grazing with shelter against berg winds and sun.

Woodland browse cover
Woodland browse cover in axis deer camps brings shade, shelter and a steady supply of natural feed.

Water-point calm
Pairing shaded rest with every trough keeps deer steady and low-stress, even on hot or windy days.

Compact sika turf
Smaller, well-planted sika turf camps help these quiet deer settle and thrive on South African farms.

Soft handling race
A soft handling race helps deer move quietly and safely when we need to guide or inspect them.
Visit
Farm gates and show stands
You are welcome to book a farm visit, student day or a tour of our veld camps, but all visits are by appointment. We arrange group bookings for agricultural colleges, chefs, and game farmers at our various sites: from the Karoo home farm and Bloemfontein stand, to the Midlands gate and the Lowveld supply gate, or our barn classroom outside Stellenbosch.
