Farm Table Venison bloodlines

Every Farm Table Venison lot is traceable to its herd and season, with clear lineage and paperwork.

Named lots link venison back to specific herds

Farm Table Venison draws directly from our main fallow and red deer herds, where each lot is named and recorded before the animals leave camp. These deer are born and raised at Karoo Edge, with all movements tracked through our handling facilities and recorded by our stud records lead. Each group selected for venison is identified by origin, season, and the specific veld camp they grazed.

We believe restaurants and farm shops deserve to know exactly where their venison comes from. That is why every batch carries its own provenance pack. When we prepare a lot for the abattoir, we keep the group together for the whole process, so the story stays clear from veld to butcher block.

Selection focusses on temperament, veld-fit and healthy growth

Choosing animals for Farm Table Venison is a careful business. We look for strong growth, veld-fit conformation and calm, low-stress temperament. Our herd husbandry manager knows each camp and watches for individuals that thrive on natural Karoo grazing. We avoid selecting from close relatives to keep genetic diversity healthy.

Sires and dams are chosen with long-term herd quality in mind. Stags and bucks are assessed for structure, even antler development and how they move through the veld. Only those with good feet and sound frame make the cut, especially in El Niño seasons, when the veld has to carry a bit further. Dams are chosen for their mothering ability and resilience through drier spells.

Paperwork covers provenance, permits and chef records

With every Farm Table Venison delivery, the buyer receives a provenance pack. This includes the lot name, herd origin, season, and official abattoir documentation. Our venison provenance manager ensures the cold chain records are included, so chefs and butchers can trace every step from farm to table.

Paperwork also covers compliance with permits: fallow and red deer are Category 2 invasive species, so each movement is legally documented. You will have the records you need for your own kitchen traceability requirements, along with animal health clearances for peace of mind.
