Named lots from fallow and red deer camps

Farm Table Venison is drawn from our main fallow and red deer herds across Karoo Edge and satellite camps. These are well-fenced camps on Karoo veld and winter grasses, with animals rotated for veld rest and fresh grazing through the seasons. The Overberg office coordinates chef orders and farm shop scheduling, while every lot’s route is tracked from camp to abattoir. Each batch is named for origin, season and camp, tying a named camp and week to each cut. Chefs receive the camp name and harvest week with every delivery.

Careful veld work and low-stress handling daily

Day to day, our herd husbandry manager runs the herds with camp moves for veld rest, water checked twice daily and natural shade preserved. Our team walks the perimeter for fence checks and deer condition. The cold chain starts in the abattoir chiller, and packed lots travel to the Karoo Edge cold room in a refrigerated vehicle. Our venison provenance manager oversees the provenance records and lot sheets, matching every delivery back to the herd, the field and the season. If the cold room batteries run low, solar or generator backup takes over. Records run right up until the butcher signs for the lot, so any chef or farm shop can call for provenance details if needed.

Who it suits and what you get

Farm Table Venison suits chefs, butchers, farm shops and small lodge kitchens wanting direct origin for their menu or counter. Each delivery comes as a named provenance pack: seasonal cuts, butchery briefing and a lot sheet signed off by our venison provenance manager. You get venison that can be traced right back to the veld camp and the week it was harvested, with the guarantee of a proper cold chain and humane handling. Every pack carries that record to the plate.

What to plan for with permits, seasons and vet checks

Venison is only supplied from animals slaughtered at our registered partner abattoir under the Meat Safety Act, so no farm gate slaughter happens here. For buyers, it’s important to note that fallow and red deer are Category 2 under NEMBA. Live animal movement needs a permit, and meat packs do not. Good fencing is both a legal requirement and a basic duty on every camp. We keep regular veterinary checks, and only deliver when a herd is all clear and no FMD controls apply in the area. Seasonal rainfall can affect veld carrying capacity, and El Niño years can bring drier spells, so we watch pasture condition and water levels closely.
